To survey your surroundings means to watch and examine your surroundings. It just means scan the water and look out for trouble.
References :
Just get in the water and practice swimming the 500 today and see how long it takes you. Each day try to get better and see how long it takes you. As for the brick try getting an empty milk container and filling it with water and swimming from one side of the pool to another.
References :
I'm a certified lifeguard myself! :)

In two weeks....it doesn't give you much time. You need to get into the water on a daily basis and try to swim longer in your workouts by five minutes every three days. That will get your swim to around 20 minutes longer than it is right now and should provide the psychological boost you'll need when being pressed to perform in the testing.
References :
At least 3 times a week you should be in the pool doing laps. If you don't know how to swim or don't know the basic stroke mechanics then you need to take lessons. You'll need to know more than just the strokes - the brick exercise with no goggles and swimming on your back with a whip or beater kick should come naturally to you. If you're not already fairly proficient in swimming I'd look for a different job because a lot of job candidates are from high school and college swim teams. The test just gets you certified - getting hired over other more experienced people is a separate issue.
